My wife heard me raving about the bacon-maple funnel cake I tasted at the Tennessee Valley Fair on Friday. Unfortunately, she can’t have one because the gluten in the cake would upset her stomach.
When she and I visited the fair together, we had a brainstorm. What if there was a gluten-free alternative?
We pitched our idea to my friend “Mama Jane” Harris, who was in one of the booths operated by The Best Around, Inc. Would she put her bacon-maple topping on a spiral-cut potato? Jane’s boss, Kevin McGrath, left and returned minutes later with a spiral potato from another one of his booths. Voilà! A new delicious fair food was born.
